This week’s Substack is short and sweet. Here are ten summer recipes for your Fourth of July celebrations and weekend cooking.
1. Bruschetta Halibut. The easiest no-fail fish recipe. A simple bruschetta topping (we’ve all made it) piled on fresh fish and grilled. EVOO, salt, & crusty bread to finish.
2. Pork Ribs. My husband’s favorite dish. Rub, wrap, and cook low and slow for three hours (oven or grill/smoker), then top with BBQ sauce and broil or sear. Fall-off-the-bone, but not too-off-the-bone.
3. Peach Cobbler. The sensation started a few months ago when I did this on Fox. Of course, this peach cobbler can be made with any fruit - even frozen - and is better with ice cream.
4. Basil & Tomato Salad. Not really a recipe, but I can’t forget it!
5. The New Wedge. I will never get over this crunchy, bright, herby salad. I’ve posted it 1000x, and I will continue to do so.
6. Cherry & Strawberry Crostata. A pie, but easier. And perfect for a rental house when you don’t have a pan.
7. Arugula & Pecorino Salad (with Blackberries). A great peppery salad to have on a table.
8. Three Pepper Pasta. Serve hot or cold; this is one of my favorite summer pastas.
9. Pasta all Norma. Nightshades got a bad rap for a while, but like all things, it’s coming back around. During the summer, this dish is perfection.
10. ‘Smore Pop. This recipe is so old, and the picture is dated, but it’s such an easy, crowd-pleasing recipe that it’s worth including.
